Tomato Timur Pickle

Golbheda ko aachar with timur and dhaniya (Tomato Timur Pickle/Chutney)

This recipe came to us from Bimala Thapa, a Katmandu native now living in Union Square. Timur is a Nepali spice that is citrusy and mildly peppery. Wait until you smell it: You may be instantly smitten! Timur is available at Bombay Market, 359 Somerville Ave. This aachar makes a great accompaniment to nearly any Nepali or Indian meal; it also makes a great appetizer when served with chapati or naan.

Soupe Joumou

Ingredients:

1 lb corned beef or beef stew meat
water
1 1/2 lbs pumpkin, peeled & diced
2 turnips, diced
1 small onion, finely chopped
1 sprig parsley
1 sprig thyme
3 garlic cloves, crushed
1 cup milk
1/8 teaspoon nutmeg
1 tablespoon butter
3/4 cup rice, washed (uncooked, not instant)
salt
3/4 teaspoon pepper
2-4 teaspoons butter

We often share this recipe on ArtsUnion Market Tours because many of the ingredients are available at La Internacional (318 Somerville Ave.). It’s pretty easy to make—and delicious! Also known as Aztec Soup or Tortilla Soup, Sopa Azteca is a staple of Mexican cuisine. The recipe varies slightly by region. in Guanajuato State, they use guajillo peppers; in Oaxaca State, they use pasilla peppers. Avocado Mallow Ice Cream

In case haven’t heard, Marshmallow
Fluff was invented in Somerville. Archibald Query whipped up the curious white goo at his house on Springfield Street in 1917. For the past several years, the Somerville Arts Council’s ArtsUnion Project has included the popular “What the Fluff?” Festival in its summer lineup. Produced by Union Square Main Streets (USMS), the fest features a cooking contest. This recipe was the winner in 2009. USMS hopes to put out a Fluff cookbook within the next year.… Read more…

Ají de Gallina

This tasty chicken dish gets its sunny hue from the spicy ají amarillo chile pepper, one of the key ingredients of Peruvian cuisine. In Somerville you can find jars of ají amarillo chiles at Latino Americas Market at 501B Medford Street in Magoun Square. For out of towners, try your local your local Latino market. Surprisingly, Amazon.com also carry these peppers!

4 to 6 servings

  • Chicken breast, boneless, skinless — 2 pounds
  • Water or stock — 3 cups
  • Salt and pepper — to season
  • Oil — 3 tablespoons
