Estela Calzada teaches us how to create a classic Mexican dish from Puebla.

A native of Durango, Mexico, Estela Calzada will teach attendees to create a Mexican meal speaking Spanish —while we offer full translation into English. We will make Chiles en Nogada, a complex dish that hails from Puebla, Mexico and represents the Mexican flag through its colors: poblano chilis are stuffed with a mixture of meat, spices and dried fruit and covered in a white nut creme sauce that is sprinkled with red pomegranate seeds. Trust us, Estela's version of this dish is amazing. We will also make a Mexican rice and agua de nopales (a refreshing and nutritious cactus juice). For dessert, we'll make Camotes Enmielados (candied sweet potatoes with piloncillo). Once our feast is ready, we will sit down and eat and learn more about Mexican culinary and cultural traditions. Estela works at Olé restaurant and helped shaped the new menu there. When it comes to authentic Mexican cooking, she's the real deal!
